I found this amazingly easy and healthy Greek Pita Pocket recipe and decided it would be the perfect time management substitute to our boring everyday lunch sandwiches during the work week. Done in 3 simple steps and in under 15 minutes!
Step 1: Combine 1 cup diced seedless English cucumber, 2 diced plum tomatoes, 2 tablespoons chopped fresh mint (or fresh dill), 2 thinly sliced scallions, and juice from a 1/4 small lemon into a medium-sized bowl.
Step 2: Add in 2 cups salad greens (I used baby spinach instead) and 3 ounces Feta cheese (or goat cheese).
Step 3: Cut 2 Pita pockets in half and spread Red Roasted Pepper humus into the pocket. Spoon in the mixture and enjoy!
What do you take for lunch during the week? Do you prepare one thing for the whole week or make something different every morning? I’m always looking for new ideas (and my husband would appreciate it), so please share any lunch ideas or time-saver tips below!
