Packable Greek Pitas

I found this amazingly easy and healthy Greek Pita Pocket recipe and decided it would be the perfect time management substitute to our boring everyday lunch sandwiches during the work week.  Done in 3 simple steps and in under 15 minutes!

Step 1
:  Combine 1 cup diced seedless English cucumber, 2 diced plum tomatoes, 2 tablespoons chopped fresh mint (or fresh dill), 2 thinly sliced scallions, and juice from a 1/4 small lemon into a medium-sized bowl.

Step 2:  Add in 2 cups salad greens (I used baby spinach instead) and 3 ounces Feta cheese (or goat cheese).

Step 3
:  Cut 2 Pita pockets in half and spread Red Roasted Pepper humus into the pocket.  Spoon in the mixture and enjoy!

    • It is absolutely delicious! Justin ate these for lunch for work for a week. My only new tip would be to mix all the ingredients in a bowl and refrigerate. Then when you make it for lunch that day just stuff it in the pita, wrap, and go. Sometimes if it sits too long in the pita it can it can get a little soggy! Let me know if you decide to try it!
