Honey Butter Pork Tenderloin

Ninety-five percent of the meals prepared in my kitchen include chicken, whether it be chicken breasts, strips, cubes, or shredded.  For some reason, a meal with chicken gets my taste buds dancing quicker than one with beef, pork, or fish, which by the way has zero appeal.  However, this Honey Butter Pork Tenderloin recipe from Sprinkle Joy looked delicious with the added bonus of only requiring six ingredients, three of which most of us already keep stocked in our cabinets, so I decided to stop being a chicken and try the recipe.  After searching high and low in our local grocery store for Cajun seasoning without any success,  I had to improvise with spices from my kitchen cabinet to create a homemade Cajun seasoning (recipe below).  Between the Cajun seasoning and burning my fingers on the hot pot after removing it from the oven, this recipe definitely did not go off without a hitch (ended in tears) but in the end my taste buds were party rockin’ and next time I will be prepared with my leftover Cajun seasoning and pot holders!

Ingredients:

4 tbsp butter
2 tbsp honey
1 1/2 pounds pork tenderloin, trimmed
1/2 tsp Cajun seasoning
1/2 tsp black pepper
3/4 cup water

Cajun seasoning substitute I used about 4 tsp of this mixture:
2 tsp salt
2 tsp garlic powder
2 1/2 tsp paprika
1 tsp ground black pepper
1 tsp onion powder
1 1/4 tsp dried oregano
1 1/4 tsp dried thyme
1/2 tsp red pepper flakes (optional)

Directions:

Preheat the oven to 375 degrees.  In an oven-safe pot, heat butter and honey over medium heat until melted.  Sprinkle pork tenderloin with Cajun seasoning and black pepper; brown each side about 5 minutes, lowering heat if the honey begins to burn.  Place the pot in the oven and roast for 20-30 minutes depending on the size and thickness of the pork tenderloin.  Remove the pot from the oven and transfer the pork tenderloin to a plate; cover with foil.  Add water to the pot (remember to be careful this pot is extremely hot) and stir over medium heat; simmering about 5 minutes or until sauce is slightly reduced.  Slice pork diagonally and drizzle with sauce.

  1. I am so sorry I did not post a warning about touching the pot after you take it out of the oven. I did the SAME thing and had to have my husband help me finish cooking. Plus – he cleaned the dishes afterwards. I’m glad you enjoyed it and I hope youre hand is healing!
