3-5 tbsp reduced fat cream cheese, softened
1/4 tsp mint extract
food coloring (optional)
4 to 4 1/2 cups confectioners sugar
1/4 cup granulated sugar
Beat the cream cheese for about two minutes until soft and fluffy. Add the mint extract and food coloring; mix until well blended. Add the confectioners sugar 1/2 cup at a time until a stiff mixture forms. If the mixture becomes crumbly, add a teaspoon of softened cream cheese or water at a time until you have the correct consistency. Form 1/2 tsp sized balls, roll in granulated sugar, and flatten with a fork. Store in an airtight container in the refrigerator for up to four weeks.
