Easter Bunny Cupcakes


for the cupcakes:
funfetti cupcake mix
vegetable oil
cupcake liners

for decorating:
white icing
shaved coconut, sweetened
jelly beans (Starburst are the BEST!)
large marshmallows
small marshmallows
pink sprinkles


Bake cupcakes as directed on the box, let cool completely, and then frost each with white icing.  Cover the icing with shaved coconut for the bunny’s fur, add a pink jelly bean for the nose, two green or blue jelly beans for the eyes, and two small marshmallows for the bunny teeth/mouth.  Cut a large marshmallow in half, shape into an oval, sprinkle the sticky side with pink sprinkles, and attach to the cupcake using extra frosting.  Ooo and awe at your adorable cupcake bunny, and try not to eat that cute little face!

Egg-Shaped Rice Krispie Treats


3 T butter
1 package mini marshmallows
6 cups Rice Krispie cereal
Easter eggs


In a large bowl, melt the butter and mini marshmallows in the microwave.  Stir in the cereal until well coated.  Spray each egg with cooking spray to prevent the mixture from sticking.  Stuff the plastic Easter eggs with the cereal mixture and let cool into their shape!  What a cute easy spin on a classic treat.
