Ingredients:
1 cup white sugar
1 1/2 cups peanut butter
1 cup clear corn syrup
4 tbsp butter
1/2 tsp salt
1 tsp vanilla extract
4 cups Special K original cereal
1 cup Reese’s Pieces
Directions:
In a medium sauce pan bring sugar, syrup, butter, and salt to a boil over medium-high heat. Allow to boil for 1 minute before removing from heat. Stir in peanut butter and vanilla until smooth. Fold in cereal making sure to coat thoroughly. Gently mix in Reese’s Pieces until evenly combined. Drop a tablespoon of the mixture onto waxed paper or aluminum foil and allow to cool (I like them to cool in the refrigerator). Makes about two dozen cookies depending on the size of your drops.

Omg this looks so good. I just can’t bring myself to actually make anything with corn syrup.

Completely understandable! It definitely does not look appetizing but it is oh so delicious in the end!

I just made this! Tastes awesome! Like scatcheroos bites!!! Perfect for a Cinco De Mayo party this weekend with the yellow and orange of the Reece’s Pieces. Might want to add in your directions that you need to add the white sugar with the corn syrup to boil.

Special K is a rice based cereal I expect other rice cereal would work well like Rice Krispies.

A friend made this yesterday and brought them into the workplace – I’m glad I didn’t know they were made with corn syrup then…they were so tasty!! I will make this recipe but try to find a corn syrup substitute… (?)

Yeah corn syrup can be pretty disheartening. Here is a great article from Taste of Home about a substitute for corn syrup. Hope it helps!

Great – Thank you for the alternative suggestion! Truth be told, a little bit of corn syrup isn’t going to kill me…but for my toddler, I’d like to give him a healthier alternative.

These look delicious, do you think they could be put in pan (9×13 or 8″ square) and cut into bars?

I would press them into a pan, refrigerate, and then cut into bars? I’ve never tried it (or even thought about it) but I don’t see why it wouldn’t work! They are very sweet so I would cut the bars into bite-size pieces still! If you try it, I would LOVE to hear how it goes!

Can these be frozen? How long will they stay fresh if not?

Hi Shelley. I have not tried to freeze them before, but definitely imagine that they could be frozen and would probably taste absolutely delicious. Mine lasted about 5 days after making them in the refrigerator but only because that’s how quick we ate them all up!

Can I substitute a different cereal? I have everything here except Special K. Thanks

I’ve never used another cereal but I bet Rice Krispies would be a close substitute! I can’t guarantee it though. If you try it, please let me know your thoughts!

If you don’t want to use corn syrup you can use honey.
