Pear-fect Salad

Chicago weather is reaching into the high 80’s and 90’s this week so I thought I would share yet another recipe (here and here) I use as an alternative from the apartment scorching oven!


1 bag spring mix salad or spinach
2 pears, cored and thinly sliced
1/4 cup roasted walnuts
1/2 cup crumbled feta cheese
2 tablespoons balsamic vinegar
3 tablespoons olive oil
freshly cracked pepper


Spread 1/4 cup walnuts onto a baking sheet in a single layer and roast for 10 to 12 minutes at 350 degrees.  Add spinach, pears, feta, and walnuts to a large bowl; drizzle with balsamic vinegar, olive oil, and black pepper.  Toss the ingredients together until well combined and serve!

    • Since you don’t like pears, combine the spinach, feta, and walnuts in a large bowl then add pears and balsamic vinaigrette to your husband’s portion and strawberries, blueberries, and poppy seed dressing to your portion (this combo is my favorite)! That way you can both enjoy a salad to your own liking and you only have to make one meal!! 🙂
