Fruit Salsa with Baked Cinnamon Chips

Two weeks spent eating an unthinkable amount of pub food of fish burgers and chips in Ireland and London had me craving fresh fruit.  This recipe combines a fruit salsa of strawberries, apples, kiwis, and raspberries with homemade cinnamon tortilla chips.  Although the addition of white and brown sugar decreases the healthiness of the fruit it truly enhances the natural sweetness of the fruit.  To keep the recipe healthier, only add one tablespoon of white sugar and omit the brown sugar completely or use fresh pita bread instead of the cinnamon chips!

Ingredients:

for the fruit salsa:
2 kiwis, peeled and diced
2 Golden Delicious apples – peeled, cored and diced
8 oz raspberries
1 (16 oz) carton of strawberries, diced
2 tbsp white sugar
1 tbsp brown sugar
3 tbsp fruit preserves, any flavor (I used strawberry; would only use 2 tbsp next time)

for the cinnamon chips:
10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray

cinnamon sugar:
1 cup white sugar
2 tbsp cinnamon

Instructions:

1.  In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar, and fruit preserves.  Cover and chill in the refrigerator at least 15 minutes while the oven preheats to 350 degrees.

2.  Coat one side of each flour tortilla with melted butter or butter flavored cooking spray.  Sprinkle tortillas with desired amount of cinnamon sugar, cut into wedges, and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).

3.  Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. This salsa can also be served with cinnamon graham crackers or cinnamon pita chips. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.

  3. Totally just made this but put manderin oranges instead of raspberries! Forgot the perserve but still so yummy! I did the sugars to taste! Got pita cinnamon chips to go with it! So excited for my hubby to try this for dinner.

I made this and it turned out beautiful and delicious although I was two ounces shy on the raspberries didn’t realize till I got home but next time I think I’m gonna experiment with a little less apples and maybe a little more kiwi and possibly bananas my husband loves it and its such a good way to get him eating healthy

    • I just looked up a stevia to sugar conversion and it says that instead of 1 tbsp white sugar to use either 1/4 tsp stevia powder extract or 6-9 drops of stevia liquid concentrate. However, I also read that a lot of it depends on your taste and how sweet you want the fruit. I would start with the recommended amount and add a little at a time until it reached the flavor you were going for! Hope this helps! Let me know if you try it and how much you used! Thanks Judy!

    • I would say about 10ish servings. In my experience the chips ran out much quicker than the fruit salsa so in the future I would definitely make extra chips! Would love for you to let me know for sure though how many servings it yielded! Thanks Linda!

  8. I’ve seen the Mission sugar& cinnamon tortilla chips at Meijer, Woodmans and most grocery stores. They are a seasonal chip unfortunately so stock up! Just bought 3 bags yesterday.

    • Hi Amber. If I remember correctly (was a while ago), the fruit gets a little soggy as it sits in the fridge. Maybe, cut up all the fruit the night before and throw in the jam and sugars before the party? Hope that helps. Let me know what you end up doing and the outcome! Thanks!

  10. Sooooooooooo delicious!!! Both the fruit and chips are amazing!! I didn’t use any sugar or jam in the fruit, but I did add about a 1/2 Tbsp of honey, and a splash of lemon juice. Hopefully it won’t get to runny b/c this is for a function after church tomorrow afternoon….will let you know! Thank you for the wonderful recipe!

    • It definitely depends on who you are feeding ad the purpose (app vs a meal) but I would say the salsa would be a great app for a party or a two day snack for a family? The chips do NOT go as far as the salsa (at least in our house). I would almost double the number of chips! Let me know if this is helpful or accurate or of you have other questions!

I did find some sugar/cinnamon chips at the grocery which I’ll use this first time (cut down on the sugars in salsa since they’re on the chips).   14. I made this for a potluck and instead of the sugars and preserves I used some agave and orange juice (I would say about 1T-2T each) and it turned out fantastic! It was referred to as “crack” and at least four people asked for the recipe and the small kids who got bowls of the fruit kept asking for more (even the picky eaters!).

  17. I made this and it was really good…but you should probably eat it fairly quickly (which I did not). However, I liked it even better the second day. It became very juicy so I just purchased an angel food cake and some cool whip and it became a dessert that was something like strawberry shortcake. I personally liked it much better the second day (and third).

  18. Personally I think the bananas are better than raspberries. The bananas tend to give off an even sweeter taste than the raspberries do. Definitely liked it a lot. Both were good but I liked the bananas better.

  21. This is Amazing!!!! My 4 year old daughter and I just got done making this. We made a few adjustments, only because we wanted to use what we had on hand . We used pineapple, mandarin oranges, blueberries, apples and bananas. Love that this recipe is so versitile that you can add just about anything and it still tastes WONDERFUL! I had planned on using it as a side dish and couldn’t get it finished in time for dinner (it was taking way to long to wash, cut and put together and manage the kids). So it sat in my fridge for a few days and it was juicy! And delicious! My husband and kids couldn’t get enough and LOVED it! Thanks for the great idea!

  30. Your version is similar to the one I have been making for years. Always a big hit. For those wanting to up the nutritional ante, I use whole wheat tortillas and water to make my chips. You don’t notice the whole wheat and the water makes the cinnamon/sugar stick to the tortilla when you bake them. Store in an airtight container and enjoy for days….that is if there are any left.

  42. Tried this for a snack around the camp fire! It was amazing!! I found that I needed to keep the chips in for the full 10 minutes so that they could support the salsa!! Everyone loved it!!! Instead of the preservatives I used lemon concentrate. Twas delicious!!

    • The actual fruit salsa would probably serve 10 since it would just be a side dish at the cookout but the chips would not. Again it just depends on how big of eaters everyone is. 🙂 have fun!

  50. Everyone loved it! Instead of using raspberries I used bing cherries that I had on hand. It was much more labor intensive to pit and cut up the cherries but it was delicious and worth it! I will definitely make this again and again.

  53. Would you have any ideas to sub for the apples? Bing cherries might work since I saw someone do that above for the raspberries. My son has fructose malabsorption and has a very, very limited list of fruits he can have. Bings are on his ‘no’ list but we have been able to let him have a ‘few’ here and there with no problem. Do you think I could use bananas? Just wondering

    • I think the best thing about this recipe Chris is that you can substitute any of the fruits. I definitely think bananas would work, however, you may want to eat them sooner over later since bananas can get soggy easily. Let me know how it worked out please!

  63. don’t make the salsa too far in advance – that day if possible. But the cinnamon chips could be before that. I used the smaller amount of jam/preserves that it mentions and it was still plenty sweet.
