For our Fourth of July party last Saturday (here) I wanted to contribute a patriotic looking dessert (red strawberries, blue blueberries, and white frosting) that had a small healthy aspect to it (fruit). These mini fruit pizzas are completely simple to make: premade sugar cookie dough, two ingredient frosting, and sliced fruit. Plus, Justin had tons of fun decorating each individual pizza differently, perfect afternoon activity for your little kiddos. Can you spot his owl inspired pizza?
Ingredients:
1 pkg Pillsbury pre-cut sugar cookie dough
8 oz cream cheese, softened
16 oz cool whip
4 cups any kind of fruit (I used strawberries, blueberries, kiwi, and oranges)
Directions:
Cut each cookie of sugar cookie dough in half, roll into balls, and place in a mini-muffin pan to cook for 9-10 minutes at 350 degrees (I rotated my pan after 5 minutes so they would cook evenly). Whip the softened cream cheese until smooth. Beat in the cool whip until well blended. Place the frosting into a Ziploc baggie, cut off the tip, and squeeze onto the cookies. Decorate with any bite-sized fruit, enjoy!
