Garlic Chicken with Cucumber Salad

Wanting our Friday night to be low-key, easy, inexpensive, and healthy, my girlfriend, Kate, and I stayed in to cook and catch up. Between the two of us we had all the ingredients needed for this easy baked garlic chicken and cucumber, tomato, feta side salad. Although they were great as made, in the future I would double the brown sugar mixture for the chicken and add more feta to the salad (obsessed with feta). Both these recipes will definitely be recreated in the near future for their ease, healthiness, and deliciousness.

Easy Baked Garlic Chicken

Ingredients:

4 boneless, skinless chicken breasts
4 garlic cloves, minced
4 tbsp brown sugar
3 tsp olive oil

Directions:

Heat the olive oil in a saucepan; add in the minced garlic and saute. Remove the pan from heat and stir in the brown sugar. Place chicken breasts in a lightly greased casserole dish and top with the brown sugar/garlic mixture. Add salt and pepper to taste and bake at 500 degrees for 15-25 minutes.

Cucumber Tomato Feta Salad

Ingredients:

1 pint halved cherry tomatoes
2 medium cucumbers, halved lengthwise, seeded, and diced
1/2 medium red onion, diced
1/2 c feta, crumbled
1/4 c fresh basil, shredded
1 tbsp red wine vinegar
1/2 tsp raw sugar or honey
2 tbsp olive oil
1/2 tsp freshly ground black pepper
1/2 tsp sea salt

Directions:

In a large bowl, combine tomatoes, cucumbers, red onion, feta, and basil. Whisk together the red wine vinegar, sugar or honey, olive oil, black pepper,and sea salt; drizzle over the salad and toss to combine well.

    • Me too! Can’t go wrong with a recipe that simple! Did you agree that the sauce could’ve been doubled or did you think there was enough? My husband said it was good the way it was, I wanted more brown sugar! Would love a 3rd opinion!
