Pizzadillas

Being responsible for fifteen meals a week (breakfast, lunch, dinner) for two little ones got me searching for new, kid-loving recipes!  This recipe combines two of our usual favorites (pizza and quesadillas) into one simple, kid-tastic recipe, which has easily become the new lunchtime favorite.

Ingredients:

canola oil or cooking spray
8 inch flour tortillas
shredded mozzarella cheese
marinara sauce
pizza fillings (pepperoni, sausage, black olives, onion, peppers, etc)

Directions:

Preheat the oven to 400 and spray a baking pan with cooking spray.  Place the tortilla on the pan, top with 3 tbsp mozzarella followed by any pizza fillings and an additional 3 tbsp mozzarella.  Bake for 5 minutes.  Remove the pan from the oven and carefully fold each tortilla in half.  Bake an additional 5-10 minutes or until the outside is beginning to get crispy and brown, remembering to flip the pizzadilla halfway.  Serve with marinara sauce for dipping!
