Recipe // Pumpkin Bars

Pumpkin_BarsWhen you travel for a long duration of time whether it be two weeks or eight months, you begin to have frequent conversations of the food you miss from home. The comfort foods from your childhood, hometown restaurants, and those you create in your own kitchen. One thing that we were always craving were the sandwiches, cheese fries, and spice cake from a Quad-Cities only deli called Hungry Hobo (if you’re ever in the area, you HAVE to stop). While we were home this past summer for three months we definitely ate enough spice cake from there to make up for the previously missed eight months. Now that we are yet again out of Hungry Hobo’s location range, we’ve resorted to making and devouring this decadent, rich, life-changing pumpkin bar recipe to remind us of home. Special thank you shout-out to the Fox family for sharing this recipe with us – we can’t get enough of it!

PumpkinBars-2 PumpkinBars-3Pumpkin Bars:

for bars
15 oz can pumpkin
4 eggs
2 cups sugar
2 cups flour
1 cup vegetable oil
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

for frosting
8 oz package cream cheese, softened
1 stick butter, softened
4 cups powdered sugar
1 tsp vanilla

Mix together all the ingredients for the pumpkin bars until smooth, pour into a greased 10×15 or 11×14 jelly roll pan, and bake in a preheated oven at 350 degrees for 20-25 minutes. In a large mixing bowl, cream together the vanilla with the softened cream cheese and butter then slowly mix in the powdered sugar until frosting is smooth. Allow the pumpkin bars to cool completely before frosting and devouring.

No Computer Means…

…attempting to utilize my iPhone to the best of its ability, which luckily for you all means sharing this super cute video of my fur baby, Maddie, who I finally get to see this coming weekend. Justin and I are headed back to Iowa for our good friends’ wedding, to see family and meet my new baby cousin (2nd cousin, maybe?), and to finally bring Maddie and her little sis, Oakley, to Seattle, the most dog friendly place I’ve ever lived. I mean my heart seriously aches watching this, just so darn cute. I can’t even imagine how moms feel about their real babies if I obsess this much over my fur ones! Just watch and see this bundle of cuteness.

And just because I don’t want Oakley to feel left out (since she can get online and read this), let us take a moment to bask in her adorableness.

Philly Cheesesteak

American_Classics-2Barbecuing was out of the question in Iowa this Memorial Day weekend due to the non-stop rain so we called an audible, put the burgers and brats back in the fridge, and tried something new (to us anyways) but equally American: homemade Philly Cheesesteak sandwiches accompanied by chips, dip, and Budweiser. Did you barbecue on Memorial Day? What’s your favorite grilled item?

American_Classics-1 American_Classics-3 American_Classics-4Philly Cheesesteak with Garlic Aioli (adapted from)

1/2 cup mayonnaise
4 cloves garlic, pressed
2 tablespoons butter
1 pound boneless chuck steak, thinly sliced
salt and pepper to taste
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
4 hoagie rolls, toasted (I forgot the toasted part, whoops)
1-2 cups white extra sharp cheddar cheese, shredded

Directions:

Preheat oven to broil. Combine mayonnaise and garlic into a small bowl. Melt butter in a medium skillet over medium high heat, add steak, season with salt and pepper to taste, and cook until medium rare, about 5-6 minutes. Transfer to a plate. Add onion and bell peppers to skillet and cook until tender and golden, about 6 minutes. Toast the rolls. Assemble the sandwiches (makes 4): spread garlic aioli inside each roll, top with steak, onions, bell peppers, and cheese. Place into oven and bake until cheese has melted, about 2 minutes. Serve immediately.

Unfortunately here in Iowa it has been raining cats and dogs for the last 48 hours forcing us all inside on this three-day weekend and making it virtually impossible for me to take the outfit pictures I had planned to post today. Since I won’t be wearing my new swimsuit boating today to celebrate all our vets on Memorial Day as planned, I thought I would share two ways to dress patriotic for Memorial Day for those of you fortunate enough to get outside to enjoy the beautiful sunshine, warm water, and backyard barbecues.
